Dinner on 21/03/08



Menu; fish cakes, thin sliced cabbage, tomatoes, rice and umeboshi puree

I made fish cakes from scratch. I used tinned salmon, mashed potatoes and green onions. I will try to write a recipe for it some time. It's really easy to make them. The sauce on the cakes is tonkatsu sauce. The sauce is originally for pork cutlet, but I use it for all sorts of things. My daughter loves the sauce :)




Apple Pie baked on 18/03/08

I baked an apple pie with my husband on that day. I made the filling, and he took care of the rest. It was a guess work how much ingredients to use, but it turned out to be really nice. As far as I remember, I cooked sliced apples in a pot with butter, raisins, sugar, a bit of apple juice, cinnamon, and a drop of vannila extract. It was another way of using up apples. I think we decided to make it as the apples were getting old.

Menu; stir-fry vegetables on rice

It was a very easy dinner to cook. I simply stir-fry vegetables and tuna, add a bit of oyster sauce to taste, and then put on a bowl of cooked rice.
I sprinkled a pinch of black pepper on top. You can use any vegetables for this dish. On that day, I used carrots, onions, Chinese greens and broccoli which I found in the fridge. I cook this type of dish when I want to use up vegetables in the fridge. You should give it a go.

Menu; Brazilian-style chicken & rice

It was a very easy dinner as I just used the sauce to cook chicken. It was quite nice. We had some rice and stir-fry vegetables to go with it. What I liked about this sauce is that there's no artificial ingredients in it. They are all natural.

Pudding baked on 06/03/08

I just found this photo, but I'm not 100% sure what it is. My guess is bread pudding, but not sure.
I can almost smell the spice just looking at this photo :) mmmm, yummy!

Menu; Fish & Chips

This is another typical British food. I've just noticed that I had British food two days in a row.

I love fish & chips! The fish is very similar to fish tempura in my opinion, and the chips are soooo lovely! chunky and natural! When I was living in Seattle about ten years ago, my Irish friend told me that British people put vinegar on chips. It was quite shocking to me. Vinegar on chips?!?!? For us, it's an odd combination - but now, I love it and have to have vinegar on chips. I suppose I'm anglicised after living here for 5 years :)

Menu; Bangers & Mash with onion gravy sauce

This is one of the classic British dishes - bangers & mush. Bangers mean sausages, by the way.

Menu; cold meat, salad, baguette, pickle, pickled onions

It looks very summery, isn't it.

I love this type of baguette which is half-baked and you just bake it in the oven.

Menu; pasta with tomato sauce & vegetables

I just found this photo, but I can't remember what kind of taste it was. It must have been very simple using tinned tomatoes, garlic, onions, broccoli and sweet corn. By the look of it, I must have been trying to use up the frozen vegetables. I like simple food like this occasionally.

Allergy free cake


As I mentioned a few times, I would prefer giving my daughter non-wheat products, and on that day, I made an allergy free cake! My daughter is allergic to eggs, dairy products and soy (which is a bit upsetting as we've got lots of soy products in Japan), and this cake doesn't have any of them! Most supermarkets nowadays have a section where there are allergy free products on the shelf. On the back of "white self-raising flour", there are some recipes using this special flour. The recipe for this cake is one of them. My daughter loves this cake, and so do we! I thought it was clever to use a ripe banana instead of using an egg. The banana has a similar texture to eggs.
I'm not sure if I can write the recipe for the cake because it's not mine. I don't follow the recipe exactly though. I use less oil for instant. When I recreat the recipe, I will write it.

Menu; Vegetable stir-fry with rice noodle.

As my daughter had a very mild wheat allergy (she's fine now!), we've come to eat rice noodle instead of noodles made from wheat. I heard that rice is easier to be digested than wheat, and I prefer giving my daughter rice products to wheat products. Anyway, I boiled the noodle, stir fried vegetables and tuna and added the noodle towards the end. I like using tinned tuna with sunflower oil as it gives flavour to the dish. I didn't even need any sauce to this dish. The light brown stuff on top, by the way, is dried bonito.

It's been a while...

It's been a while since I updated this blog last... I've been wanting to update it, but haven't got round to it. I've been taking photos of my food, but I suppose I was trying to write recipes for it, which is not that easy as I don't normally think about how much sauce to put in and stuff...

Anyway, I will update photos of my food, but I won't write too much about each dish.
